THE MANIPULATION OF MOTHER NATURE
This topic gets me really heated... so I will try to keep this section as brief as possible.
^ Me at the conventional food system.
The conventional food system is trying to 'outsmart' and manipulate Mother Nature. Let me explain.
The widespread nutrition lie we have been fed the last 50+ years (saturated fat is 'bad' and polyunsaturated fat is 'good') is changing the food industry, for the worse.
In fact, the biggest dietary change humans have seen in the last 100 years is a massive increase in PUFA consumption (due to the US Dietary Health Guidelines recommendation of 'eat more PUFAs' and 'eat less saturated fat') - and this has had disastrous effects on metabolism, obesity rates, lifespans (it's declining) & rates of chronic disease development.
It is important to note that even the blue line above (animal fats) has CHANGED!!!!!! Meaning, the types of fat (% saturated, % polyunsaturated, and % monounsaturated) in animal fats has changed due to a change in how we feed and raise livestock.
And the higher PUFA consumption directly lowers metabolic rate, and this decline in basal metabolic rate (BMR, the amount of calories we burn at rest) is now documented in the literature - the timing lining up directly with the large PUFA increase.
The conventional food system has already made disastrous changes to the types of fat in chickens and pigs (I have talked about this extensively, as chicken and pork fat can have the same amount of metabolism-suppressive, inflammatory PUFAs as Canola Oil). And this dietary fat change is relatively easy to do because chickens and pigs are single-stomached animals (like us). So the type of fat in their diet directly impacts the type of fat in their tissues. (Conventional feed is now very rich in PUFAs).
Many people believe that the food that is fed to ruminant animals (cows, lamb, goats) doesn’t matter since ruminants are able to convert the PUFAs they consume into saturated fatty acids (they have a very different digestive system relative to chickens and pigs).
Yes, the microorganisms inside the rumen can transform unsaturated fatty acids (PUFAs) into saturated fatty acids using a process called biohydrogenation. (ref) where the ruminal microorganisms remove double bonds in a fatty acyl chain by adding hydrogen, converting PUFAs to saturated fats.
Well, unfortunately, scientists have now figured out how to change the fatty acids in ruminant fat (dairy and beef fat).
There has been a large push in the industry to try to reduce the levels of saturated fats and increase polyunsaturated fats (ref) due to the large-scale lie that Saturated fats are unhealthy and that we need more PUFAs to be ‘heart healthy’.
Ridiculous research has figured out that you can feed ruminants something called 'rumen protected fats’ such as oilseeds in order to increase PUFAs in the milk. (ref) (DOESN'T THIS MAKE YOU ANGRY! WHY IS MONEY BEING WASTED ON STUDIES LIKE THIS???)
Oilseed crops = soybeans, cottonseed, flaxseed, sunflower seed, safflower, canola, rapeseed and peanuts. They are seeds that contain a large enough quantity of oil to warrant oil extraction and are so high in PUFAs that some of the PUFAs pass through digestion increasing PUFAs and decreasing SFAs - the opposite of what we want for health.
Reading through the literature about PUFAs, human health, and food production is one of my favorite hobbies (this is my passion) - so here are a few quotes I found in the literature that get me fuming.“Interest in manipulating the fat content of milk was in full force entering the 1980s. The Dietary Guidelines for Americans published in 1980 by the US Department of Health and Human Services and the Department of Agriculture (USDA) emphasized reductions in total fat, saturated fat, and cholesterol.” (ref)
‘“The milk fat saturated FAs were decreased by 16%–20% in the test diet” (ref)
“The purpose of the study was to obtain butter enriched with PUFA from the milk of Holstein cows with a modified fatty acid composition towards an increased content of unsaturated fatty acids….In the milk fat of the milk of the experimental group of cows, the total amount of saturated fatty acids was reduced by 14.9%, and unsaturated fatty acid level was increased by 12.6%; as a result, the ratio of unsaturated to saturated fatty acids was higher by 31.7%.” (ref)
“The inclusion of saturated fats in human diets may bring the risk of cardiovascular diseases (Joyce et al., 2009). However, for milk processors, milk with high saturated fatty acids (SFA) may improve the keeping quality but may be detrimental to human health. The negative effects of SFA seem to outweigh their positive functions in milk, so more research is needed to reduce the amount of SFA in milk” (ref)
Humans are trying to manipulate Mother Nature’s design because humans think we ‘know better’. But this increase in PUFA consumption is having disastrous consequences on human metabolism.In my opinion, knowing where your dietary fat comes from (butter, milk, cheese, cooking fats, pork, fatty beef cuts, fatty chicken cuts, etc.) is THE most important thing to source properly.
Not only because fat is where animals store toxins (so if they are raised on chemical-rich pastures, are heavily medicated, or are fed feed doused in RoundUp or other toxic chemicals - those will show up in the fat)
But also because the TYPES of fat (% saturated, % monounsaturated, % polyunsaturated) is impacted by how the animals is raised and what the animal is/is not fed.
END RANT.
But this is why we do what we do at Nourish - we were fed up with this BS! We will NEVER try to outsmart nature - instead we will work with her, and produce food how it is supposed to be produced.
